Ingredients (Serves 2)

  • 1 Cornish game hen (about 1-1.5 lbs)
  • 2 tsp Savory Sadhana Sambar Masala Blend
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • 1 tbsp garlic paste or minced garlic
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp plain yogurt (optional, for extra tenderness)
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh rosemary or thyme sprigs (optional for stuffing)
  • ½ lemon (sliced, for stuffing)

Instructions

  1. Prepare the Marinade:
    • In a bowl, mix Sambar Masala Blend, smoked paprika, ground cumin, garlic paste, olive oil, lemon juice, yogurt (if using), salt, and pepper to create a flavorful marinade.
  2. Marinate the Game Hen:
    • Pat the Cornish game hen dry and rub the marinade generously all over, including under the skin for maximum flavor.
    • Stuff the cavity with lemon slices and fresh rosemary or thyme, if desired. Cover and marinate for at least 2 hours or overnight in the refrigerator.
  3. Roast the Game Hen:
    • Preheat the oven to 400°F (200°C).
    • Place the marinated hen breast-side up on a roasting pan or baking dish. Roast for 45-55 minutes, basting with its juices halfway through, until the internal temperature reaches 165°F (74°C) at the thickest part.
  4. Serve:
    • Let the game hen rest for 10 minutes before carving. Serve with roasted potatoes, steamed vegetables, or a side of couscous for a complete meal.

Pro Tip:

  • For the Cornish hen, add a handful of chopped root vegetables (like carrots and parsnips) to the roasting pan to soak up the flavorful drippings.
